Ok, It Worked!
I did not try the two words to see if that is still a bug, I used one to be safe.
Here is what I suggest for anyone else having problems:
Custom Mapping for Import
1. Setup a comma separated value (.csv) file that has the header and only one or two contacts in it. Try to pick a contact that has the most fields filled in so you can test everything.
2. Do your import like normal and try saving your custom mapping wit ha single word name (no spaces)
3. Make sure is says "Success" and shows you a list of contacts imported BEFORE you navigate away from the page. I was never sure if it should just keep working in the background and let you do something else but this is not the case.
4. Make sure you select finished instead of just switching pages
5. Try a new import, and see if your saved custom mapping appeared, Mine Did!
